Fancy Pasta and Pesto

Pasta is always a budget meal. It's carbs, it's tasty and it's good. Plus, my family love it. This quick pasta and pesto recipe is easy to prepare and make. The big mushrooms let off lots of lovely juice once cooked, making the sauce even tastier.

Serves 4

400g pasta
1/2 jar of green pesto
1/2 head of brocolli
2 large flat mushrooms
1 red onion
handful of olives
a little oil for frying

- Cook pasta as per packet
- Thinly slice onion and fry until soft
- Add brocolli florets and fry for a few minutes. Add a splash of water to soften slightly.
- Add the mushrooms and cook until the juices run out.
- Add the pesto and olives and mix well.

We usually make extra for lunch the next day. It reheats well in a microwave and makes a great lunch for my husband to take to work.

Kids love this with a bit of creme fraiche to soften the flavour a little.
